Fruity Pebbles™ Pudding Cookies

Ingredients 

  • 1¼ cups Fruity PEBBLES™ cereal
  • 1¼ cup white chocolate chips
  • 1/2 cup unsalted butter softened
  • 1 egg
  • 3/4 cup brown sugar packed
  • 2 tsp vanilla extract
  • 1¼ cup flour
  • 1 box instant vanilla pudding mix
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Instructions

  1. Preheat oven to 350° F.
  2. Cream butter and sugar in a bowl until fluffy. Mix in egg and vanilla until smooth.
  3. In a separate bowl, combine flour, instant pudding mix, baking soda, and salt. Slowly add to wet ingredients.
  4. Mix in white chocolate chips and Fruity PEBBLES™ cereal.
  5. Roll or scoop dough into 2' balls and place 2" apart on a baking sheet lined with parchment paper. Chill for 30 minutes.
  6. Bake cookies for 10-15 minutes, or until edges are golden brown.
  7. Let cool for 10 minutes, then transfer to cooling rack.
