Birthday Cake PEBBLES Cereal Cake
A celebration-worthy layer cake made with a real Birthday Cake PEBBLES™ cereal milk-flavored batter and crushed cereal folded right, topped with a fluffy birthday cake-flavored buttercream. This three-layer 6-inch cake brings a nostalgic, funfetti-style sweetness to any birthday or special occasion.
Ingredients
Cereal Milk
- 1/2 cup Birthday Cake PEBBLES cereal
- 1 1/4 cups milk
Cake
- 1 3/4 cups all purpose flour
- 1 cup granulated sugar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup Birthday Cake PEBBLES cereal milk (ingredients listed above)
- 1 teaspoon vanilla extract
- 1 teaspoon birthday cake extract
- 1/3 cup vegetable oil
- 1 tablespoon white vinegar
- 1/2 cup Birthday Cake PEBBLES cereal crushed
Frosting
- 8 tablespoons butter room temperature
- 7 1/2 cups powdered sugar
- 2 teaspoons vanilla extract
- 2 teaspoons birthday cake extract
- 5 tablespoons heavy cream divided
- Food coloring optional
Instructions
Make the cereal milk
- Soak Birthday Cake Pebbles™ cereal & milk in a bowl for 30-45 mins.
- Strain milk & cereal mixture, discard the cereal.
Make the cake
- Preheat oven to 350°F. Grease & line three 6-inch round cake pans; set aside. In a large mixing bowl, sift together flour, sugar, baking soda, & salt.
- Gently mix in cereal milk, vanilla extract, birthday cake extract, oil, & vinegar until just combined.
- Fold in crushed Birthday Cake Pebbles™ cereal.
- Divide batter evenly between prepared cake pans.
- Bake for 20-25 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- Let the cakes cool in pans for a few minutes. When cool enough to handle, transfer them to a wire cooling rack to cool completely.
Make the frosting
- With an electric mixer, cream butter until light in color.
- While mixing on low, add in the powdered sugar, vanilla extract, birthday cake extract, & 3 tbsp of heavy cream.
- Slowly increase speed until the frosting is fluffy, adding remaining heavy cream for a smooth consistency, if needed, 1 tbsp at a time. Add food coloring if desired.
Assemble and decorate the cake
- Secure first layer of cake to a plate with a dab of frosting. Spread even layers of buttercream between each cake layer as you stack them.
- Spread a thin, smooth layer of frosting over the whole cake to seal in crumbs. Chill in the fridge for about 20 minutes, or until firm.
- Spread a thick final layer of frosting to the cake and smooth it out with an icing scraper or butter knife.
- Press Birthday Cake PEBBLES™ onto the sides and sprinkle onto the top.
