Birthday Cake PEBBLES Cereal Cake

Ingredients

Cereal Milk

Cake

  • 1 3/4 cups all purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup Birthday Cake PEBBLES cereal milk (ingredients listed above)
  • 1 teaspoon vanilla extract
  • 1 teaspoon birthday cake extract
  • 1/3 cup vegetable oil
  • 1 tablespoon white vinegar
  • 1/2 cup Birthday Cake PEBBLES cereal crushed

Frosting

  • 8 tablespoons butter room temperature
  • 7 1/2 cups powdered sugar
  • 2 teaspoons vanilla extract
  • 2 teaspoons birthday cake extract
  • 5 tablespoons heavy cream divided
  • Food coloring optional

Instructions

Make the cereal milk

  1. Soak Birthday Cake Pebbles™ cereal & milk in a bowl for 30-45 mins.
  2. Strain milk & cereal mixture, discard the cereal.

Make the cake

  1. Preheat oven to 350°F. Grease & line three 6-inch round cake pans; set aside. In a large mixing bowl, sift together flour, sugar, baking soda, & salt.
  2. Gently mix in cereal milk, vanilla extract, birthday cake extract, oil, & vinegar until just combined.
  3. Fold in crushed Birthday Cake Pebbles™ cereal.
  4. Divide batter evenly between prepared cake pans.
  5. Bake for 20-25 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  6. Let the cakes cool in pans for a few minutes. When cool enough to handle, transfer them to a wire cooling rack to cool completely.

Make the frosting

  1. With an electric mixer, cream butter until light in color.
  2. While mixing on low, add in the powdered sugar, vanilla extract, birthday cake extract, & 3 tbsp of heavy cream.
  3. Slowly increase speed until the frosting is fluffy, adding remaining heavy cream for a smooth consistency, if needed, 1 tbsp at a time. Add food coloring if desired.

Assemble and decorate the cake

  1. Secure first layer of cake to a plate with a dab of frosting. Spread even layers of buttercream between each cake layer as you stack them.
  2. Spread a thin, smooth layer of frosting over the whole cake to seal in crumbs. Chill in the fridge for about 20 minutes, or until firm.
  3. Spread a thick final layer of frosting to the cake and smooth it out with an icing scraper or butter knife.
  4. Press Birthday Cake PEBBLES™ onto the sides and sprinkle onto the top.
  5. Enjoy!
