Your favorite childhood cookie just got a PEBBLES upgrade. These Cinnamon PEBBLES™ Snickerdoodle Cookies have everything you love about a classic snickerdoodle — buttery, sugar-coated, crisp at the edge and chewy in the center — plus the warm cinnamon crunch of Cinnamon Pebbles baked right in. They're simple enough for a weeknight bake and special enough to bring to a cookie exchange.

Cinnamon PEBBLES™ Snickerdoodle Cookies

Ingredients 

Dough:

  • cups all-purpose flour
  • 1 teaspoon baking soda
  • 2 teaspoons cream of tartar
  • ½ teaspoon salt
  • cups sugar
  • 1 cup unsalted butter, softened
  • 2 eggs
  • cup Cinnamon PEBBLES™ cereal

Coating:

  • cup sugar
  • 2 tablespoons cinnamon

Instructions

  1. Sift together flour, baking soda, cream of tartar, and salt in a bowl and set aside.
  2. In another bowl, cream together sugar and butter. Add eggs and vanilla, then slowly mix in flour mixture until combined.
  3. Mix in Cinnamon Pebbles™ cereal until combined throughout.
  4. In a smaller bowl, combine 1/3 cup sugar and cinnamon for coating.
  5. Using an ice cream or cookie scoop, scoop 2" balls of dough, roll in hands and then coat in cinnamon sugar mixture.
  6. Place cookies on a parchment paper lined cookie sheet and bake 10–12 minutes or until edges are golden brown.
