Cinnamon PEBBLES™ Snickerdoodle Cookies
Your favorite childhood cookie just got a PEBBLES upgrade. These Cinnamon PEBBLES™ Snickerdoodle Cookies have everything you love about a classic snickerdoodle — buttery, sugar-coated, crisp at the edge and chewy in the center — plus the warm cinnamon crunch of Cinnamon Pebbles baked right in. They're simple enough for a weeknight bake and special enough to bring to a cookie exchange.
Ingredients
Dough:
- 2¾ cups all-purpose flour
- 1 teaspoon baking soda
- 2 teaspoons cream of tartar
- ½ teaspoon salt
- 1½ cups sugar
- 1 cup unsalted butter, softened
- 2 eggs
- 1½ cup Cinnamon PEBBLES™ cereal
Coating:
- ⅓ cup sugar
- 2 tablespoons cinnamon
Instructions
- Sift together flour, baking soda, cream of tartar, and salt in a bowl and set aside.
- In another bowl, cream together sugar and butter. Add eggs and vanilla, then slowly mix in flour mixture until combined.
- Mix in Cinnamon Pebbles™ cereal until combined throughout.
- In a smaller bowl, combine 1/3 cup sugar and cinnamon for coating.
- Using an ice cream or cookie scoop, scoop 2" balls of dough, roll in hands and then coat in cinnamon sugar mixture.
- Place cookies on a parchment paper lined cookie sheet and bake 10–12 minutes or until edges are golden brown.
